Banana and Ginger Muffins
Ingredients
- 60g Butter
- 2 tablespoon Sugar
- 1 Egg
- 1 Ripe Banana, mashed
- 1 cup Flour
- 1 teaspoon Ground Ginger
- 2 tablespoons Golden Syrup
- 1 teaspoon Baking Soda
- 1/3 cup Milk
Method
- Cream butter and sugar together
- Add egg and mashed banana
- Sift in flour and ginger
- Dissolve syrup and baking soda in milk and add to mixture
- Mix lightly
- Spoon batter into prepared muffin pans
- Bake 200°C for 15 minutes
I baked these in a mini-muffin pan, a mistake as they are delicious bite size morsels encouraging you to have just one more.Advertisement
