Brandy Butter Icing

Ingredients

  • 450g icing sugar
  • 150g butter, softened
  • 3 tbsp golden syrup
  • 3-4 tbsp brandy

Method

  1. Gradually beat the icing sugar into the butter, adding the golden syrup and enough brandy as you go until the icing is smooth and spreadable.
  2. Spread over the top and sides of the cake, swirling it with a palette knife.

I used this on my Christmas cake
