While it takes time to prepare, the results are well worth the effort, making it a delightful addition to your pantry.<\/p>\n\n\n\n<!--more-->\n\n\n\n<p><em>This takes some time to cook and is ideally prepared the day before.<\/em><\/p>\n\n\n\n<p><strong>Ingredients<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>4 large grapefruit (about 750g)<\/li>\n\n\n\n<li>2 medium lemons<\/li>\n\n\n\n<li>2 litres water<\/li>\n\n\n\n<li>6 cups sugar (1.2kg)<\/li>\n<\/ul>\n\n\n\n<p><strong>Method<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Peel grapefruit and lemons thinly. Cut the peel into very fine strips.<\/li>\n\n\n\n<li>Remove the pith from the fruit and cut the flesh into small pieces, reserving seeds.<\/li>\n\n\n\n<li>Tie seeds and some pith in a piece of muslin.<\/li>\n\n\n\n<li>Add fruit, peel, seeds, and water to a large pot and leave overnight.<\/li>\n\n\n\n<li>Bring to a boil, then simmer until the peel is tender and the liquid is reduced by half.<\/li>\n\n\n\n<li>Remove the muslin bag.<\/li>\n\n\n\n<li><span style=\"box-sizing: border-box; margin: 0px; padding: 0px;\">Add sugar, stir until dissolved, and then boil rapidly until the\u00a0<a href=\"http:\/\/www.howtodothings.com\/food-and-drink\/a959-to-test-if-jam-or-marmalade-had-reached-setting-point.html\" target=\"_blank\">setting point<\/a>\u00a0is reached.<\/span><\/li>\n\n\n\n<li>Leave 10 minutes, skim gently and pour into warm sterilised jars. Seal.<\/li>\n<\/ol>\n\n\n\n<p>I have a zester that produces long, fine strips.
