Using whole eggs eliminates the need to separate yolks and whites, making it both efficient and delicious.<\/p>\n\n\n\n<p>Bright with lemon zest and juice, this curd comes together beautifully in the microwave, needing only a whisk every couple of minutes. Ideal for spreading on toast, filling tarts, or swirling into desserts, it\u2019s a versatile and vibrant treat.<\/p>\n\n\n\n<!--more-->\n\n\n\n<p><strong>Ingredients<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 cup Sugar<\/li>\n\n\n\n<li>3 Eggs<\/li>\n\n\n\n<li>1 tablespoon Lemon Zest<\/li>\n\n\n\n<li>\u00bd cup Lemon Juice<\/li>\n\n\n\n<li>50g Butter, softened, chopped into small pieces<\/li>\n<\/ul>\n\n\n\n<p><strong>Method<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Beat the eggs and sugar together.<\/li>\n\n\n\n<li>Beat in juice and zest.<\/li>\n\n\n\n<li>Beat in the butter. It will lumpy. don&#8217;t try to make it smooth.<\/li>\n\n\n\n<li>Microwave on high for up to 8 minutes, until sufficiently thick, whisking every 2 minutes.<\/li>\n\n\n\n<li>Pour into hot clean jars and seal immediately.<\/li>\n<\/ol>\n\n\n\n<p>Note: I doubled the recipe to get the 3 jars showing in the photo.<\/p>\n\n\n\n<p><em>After making this I saw a recipe suggesting creaming the butter and sugar first, then adding the zest, eggs, and juice, to make the curd very smooth.
