The fresh squeeze of lemon adds a bright finish, making it a delicious and healthy choice for serving family or guests.<\/p>\n\n\n\n<!--more-->\n\n\n\n<p>Serves 4<\/p>\n\n\n\n<p>Ingredients<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 fennel bulb, cut into 1cm wedges<\/li>\n\n\n\n<li>1 large red onion, cut into 1cm wedges<\/li>\n\n\n\n<li>6 cloves garlic, smashed <br><em>I usually use the base of a glass to smash garlic, then remove the skin.<\/em><\/li>\n\n\n\n<li>1 cup cherry tomatoes<\/li>\n\n\n\n<li>\u00bd bunch fresh thyme<\/li>\n\n\n\n<li>1 teaspoon salt<\/li>\n\n\n\n<li>\u00bd teaspoon freshly ground black pepper<\/li>\n\n\n\n<li>2 teaspoons extra-virgin olive oil<\/li>\n\n\n\n<li>4 salmon fillets, skinned<\/li>\n\n\n\n<li>1 lemon, halved<\/li>\n<\/ul>\n\n\n\n<p>Method<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Heat oven to 200\u00b0C.<\/li>\n\n\n\n<li>In a roasting pan, place the fennel, onion, garlic, tomatoes, thyme, \u00bd the salt, \u00bd the pepper, and the oil. Roast for 20 minutes.<\/li>\n\n\n\n<li>Move the vegetables to the sides of the pan; place the salmon in the centre. Squeeze the lemon halves over the salmon.
