They are a fresh twist on traditional muffins, ideal for avocado lovers!<\/p>\n\n\n\n<!--more-->\n\n\n\n<p>Makes 12.<\/p>\n\n\n\n<p><b>Ingredients<\/b><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 cup flour<\/li>\n\n\n\n<li>\u00bd cup cornmeal<\/li>\n\n\n\n<li>2 teaspoons baking powder<\/li>\n\n\n\n<li>\u00bd salt<\/li>\n\n\n\n<li>\u2153 cup sugar<\/li>\n\n\n\n<li>2 eggs, lightly beaten<\/li>\n\n\n\n<li>\u00bc cup milk<\/li>\n\n\n\n<li>1 ripe avocado, peeled, pitted<\/li>\n<\/ul>\n\n\n\n<p><b>Method<\/b><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Sift flour, cornmeal, baking powder, and salt into a bowl.<\/li>\n\n\n\n<li>Stir in sugar.<\/li>\n\n\n\n<li>Mix in eggs and milk until you have a smooth batter. <br><em>I do all of this by hand.<\/em><\/li>\n\n\n\n<li>Discard any dark bits on the avocado and mash with a fork.<\/li>\n\n\n\n<li>Add avocado to the batter, mixing until just smooth.<\/li>\n\n\n\n<li>Spoon batter into a greased muffin pan.<\/li>\n\n\n\n<li>Bake 180\u00b0C for 15 minutes, until cooked through, and the tops are golden.<\/li>\n\n\n\n<li>Cool for a few minutes in the tray before turning out onto a wire rack.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>These Easy Avocado Muffins are a creative and delicious way to use surplus avocados.
