Easily scaled up for more guests, and best enjoyed warm with a little cream or fresh berries on the side.<\/p>\n\n\n\n<p>I got this recipe from <a href=\"http:\/\/mamasgottabake.wordpress.com\/2012\/04\/12\/lemon-pudding-cakes\/\">Mama&#8217;s Gotta Bake<\/a>. I&#8217;ve changed the quantities so that it serves 2. Servings are cooked in individual ramekins, so the quantity can simply be doubled or tripled to serve more people.<\/p>\n\n\n\n<p><strong>Ingredients<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>\u00bc cup sugar<\/li>\n\n\n\n<li>\u215b cup flour<\/li>\n\n\n\n<li>1 egg, separated<\/li>\n\n\n\n<li>10g butter (about 2 teaspoons)<\/li>\n\n\n\n<li>\u2153 cup whole milk<\/li>\n\n\n\n<li>\u00bd teaspoon lemon zest<\/li>\n\n\n\n<li>\u215b cup fresh lemon juice (about half a lemon)<\/li>\n\n\n\n<li>pinch of salt<\/li>\n\n\n\n<li>Raw, or some other coarse sugar, to sprinkle on top<\/li>\n<\/ul>\n\n\n\n<p><strong>Method<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>Preheat oven<\/strong> to 180\u00b0C.<\/li>\n\n\n\n<li><strong>Prepare a water bath:<\/strong> \n<ul class=\"wp-block-list\">\n<li>Place ramekins in a large roasting pan. Set aside.<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li><strong>Make the batter:<\/strong>\n<ul class=\"wp-block-list\">\n<li>In a mixing bowl, beat the <strong>egg yolk<\/strong> and <strong>butter<\/strong> until well combined.<\/li>\n\n\n\n<li>Add the <strong>sugar<\/strong> and beat until light.<\/li>\n\n\n\n<li>Mix in the <strong>milk<\/strong>, <strong>lemon zest<\/strong>, and <strong>lemon juice<\/strong>.<\/li>\n\n\n\n<li>Stir in the <strong>flour<\/strong> until smooth.<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li><strong>Whip the egg white:<\/strong>\n<ul class=\"wp-block-list\">\n<li>In a clean bowl, beat the <strong>egg white<\/strong> with a pinch of salt until <strong>stiff peaks<\/strong> form.<\/li>\n\n\n\n<li>Gently <strong>fold<\/strong> into the lemon mixture until just combined.<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li><strong>Fill and bake:<\/strong>\n<ul class=\"wp-block-list\">\n<li>Divide the mixture evenly between the ramekins.<\/li>\n\n\n\n<li>Sprinkle the tops generously with <strong>raw or coarse sugar<\/strong>.<\/li>\n\n\n\n<li>Pour <strong>boiling water<\/strong> into the roasting pan until it reaches halfway up the sides of the ramekins.<\/li>\n\n\n\n<li>Carefully transfer to the oven and bake for <strong>30\u201340 minutes<\/strong>, or until the tops are <strong>golden<\/strong> and the sugar has caramelised.<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li><strong>Cool slightly before serving.<\/strong><\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"<p>This Lemon Pudding for Two is a delightfully simple dessert with a soft, spoonable texture and bright citrus flavour.
