Quick and easy to prepare, it\u2019s perfect for any occasion, whether served plain or topped with chocolate icing.<\/p>\n\n\n\n<p>The simple method ensures consistent results and a ring tin gives it a classic presentation. With a tender crumb and rich banana flavour, this cake is a timeless treat for banana lovers.<\/p>\n\n\n\n<p>Years ago, I made a banana cake and added an extra banana&#8230;what a disaster.<\/p>\n\n\n\n<p><strong>Ingredients<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>125g butter, softened<\/li>\n\n\n\n<li>\u00be cup caster sugar<\/li>\n\n\n\n<li>2 eggs<\/li>\n\n\n\n<li>2 large, ripe bananas, mashed<\/li>\n\n\n\n<li>\u00bd teaspoon baking soda<\/li>\n\n\n\n<li>2 tablespoons boiling milk<\/li>\n\n\n\n<li>1\u00bc cups <a href=\"https:\/\/shadowfoot.com\/recipe\/substitutions\/flour-substitution\/#self-raising-flour\" target=\"_blank\" rel=\"noreferrer noopener\">self-raising flour<\/a>, sifted<\/li>\n<\/ul>\n\n\n\n<p><strong>Method<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Preheat oven to 150\u00b0C fan bake. <i>(This is one time when I recommend doing this at the beginning; the rest of the method is quick.<\/i><\/li>\n\n\n\n<li>Grease a 22cm ring cake tin.<\/li>\n\n\n\n<li>Beat butter and sugar until pale.<\/li>\n\n\n\n<li>Beat in eggs, one at a time.<\/li>\n\n\n\n<li>Stir in mashed bananas.<\/li>\n\n\n\n<li>Dissolve baking soda in boiling milk and stir into the beaten mixture.<\/li>\n\n\n\n<li>Fold in the sifted flour.<\/li>\n\n\n\n<li>Spoon the mixture into the prepared cake tin, smoothing the surface.<\/li>\n\n\n\n<li>Bake for 40-45 minutes or until a skewer inserted comes out clean.<\/li>\n\n\n\n<li>Allow to cool slightly (about 5 minutes), then remove from the tin.<\/li>\n\n\n\n<li>Ice (frost) when cold with <a href=\"http:\/\/shadowfoot.com\/recipe\/chocolate-icing\">Chocolate Icing<\/a><\/li>\n<\/ol>\n\n\n\n<p>I baked the one shown in a silicon ring mould in a benchtop oven. I covered the top (base) with foil about halfway through so the top element wouldn&#8217;t burn it.
