With the earthy warmth of cumin and the rich sweetness of pumpkin, it\u2019s a hearty dish that\u2019s easy to make.<\/p>\n\n\n\n<!--more-->\n\n\n\n<p>Simmered to perfection and blended into a creamy texture, this soup pairs beautifully with a dollop of cream or yoghurt and your favorite bread. Ideal for chilly days, it\u2019s a classic recipe that brings warmth to the table.<\/p>\n\n\n\n<p> <strong>Ingredients<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>\u00bd tablespoon olive oil<\/li>\n\n\n\n<li>15g butter<\/li>\n\n\n\n<li>1 onion, coarsely chopped<\/li>\n\n\n\n<li>2 teaspoons ground cumin<\/li>\n\n\n\n<li>About 1-1\u00bc kg pumpkin, peeled, seeded, and coarsely chopped<\/li>\n\n\n\n<li>1 litre (4 cups) stock (chicken or vegetable)<\/li>\n<\/ul>\n\n\n\n<p> <strong>Method<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Heat oil and butter in a saucepan, then cook onions for about 5 minutes or until golden. <em>(I like to make soups in my Dutch Oven, but any heavy saucepan will do.)<\/em><\/li>\n\n\n\n<li>Add cumin and cook for 1 minute or until aromatic.<\/li>\n\n\n\n<li>Add pumpkin pieces and stir to coat.<\/li>\n\n\n\n<li>Add stock and simmer for about 20 minutes or until the pumpkin is soft.<\/li>\n\n\n\n<li>Pur\u00e9e everything. <span style=\"background-color: rgba(17, 17, 17, 0.2);\"><i>(I use a stick blend<\/i><\/span><em>er for this and have fewer dishes to clean up.)<\/em><\/li>\n<\/ol>\n\n\n\n<p> Add a dollop of cream, sour cream, or yoghurt, and serve with your favourite warmed bread.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>As winter approaches in the southern hemisphere, this simple and comforting Pumpkin Soup is the perfect recipe to keep on hand.
