Best served hot with a dollop of cream, it\u2019s a timeless dessert sure to please.<\/p>\n\n\n\n<p><strong>Ingredients<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 cups hot stewed fruit, sweetened to taste <br><em>I used rhubarb in the photo<\/em><\/li>\n\n\n\n<li>125g butter<\/li>\n\n\n\n<li>\u00bd teaspoon vanilla essence<\/li>\n\n\n\n<li>\u00bd cup sugar<\/li>\n\n\n\n<li>2 eggs<\/li>\n\n\n\n<li>1 cup flour<\/li>\n\n\n\n<li>2 teaspoons baking powder<\/li>\n\n\n\n<li>2 tablespoons milk<\/li>\n\n\n\n<li>\u00bd cup chopped walnuts, optional<\/li>\n<\/ul>\n\n\n\n<p><strong>Method<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Cream butter and sugar.<\/li>\n\n\n\n<li>Add vanilla and beat in eggs, one at a time.<\/li>\n\n\n\n<li>Add walnuts (optional)<\/li>\n\n\n\n<li>Sift flour and baking powder, and fold into creamed mixture.<\/li>\n\n\n\n<li>Add milk and mix to combine.<\/li>\n\n\n\n<li>Spoon over hot stewed fruit.<\/li>\n\n\n\n<li>Bake for 40 minutes in a pre-heated 190\u00b0 C oven or until the sponge springs back when lightly touched.<\/li>\n<\/ol>\n\n\n\n<p>Serve hot with cream.<\/p>\n\n\n\n<p><\/p>\n","protected":false},"excerpt":{"rendered":"<p>This Fruit Sponge is a comforting dessert that brings back fond childhood memories.
