As seen from my <a href=\"\/rocket-pesto\">Rocket Pesto<\/a> recipe, these pestos are very similar. I omitted the garlic by mistake but found it tasty despite omitting it.<\/p>\n\n\n\n<!--more-->\n\n\n\n<p> <strong>Ingredients<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>2 cups fresh coriander (cilantro) leaves, coarsely chopped<\/li>\n\n\n\n<li>50g cashew nuts, salted<\/li>\n\n\n\n<li>40g finely grated parmesan cheese<\/li>\n\n\n\n<li>125ml vegetable oil (avoid using any intensely flavoured oil)<\/li>\n<\/ul>\n\n\n\n<p> <strong>Method<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Blend coriander, garlic, cashew nuts and parmesan in a food processor until everything is finely chopped.<\/li>\n\n\n\n<li>While the food processor is running, gradually add the oil in a thin, steady stream until well combined.<\/li>\n\n\n\n<li>Transfer to an airtight jar and cover with some extra oil to prevent it from oxidising and discolouring.<\/li>\n<\/ol>\n\n\n\n<p> This makes about a cup of pesto.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I used fresh coriander from the garden for this.
