This recipe is based on the Edmonds Vegetable Fritter.<\/p>\n\n\n\n<!--more-->\n\n\n\n<p>Note: A zucchini is the same as a courgette.<\/p>\n\n\n\n<p> <strong>Ingredients<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>\u00bd cup Flour<\/li>\n\n\n\n<li>\u00bd teaspoon baking powder<\/li>\n\n\n\n<li>\u00bc teaspoon salt<\/li>\n\n\n\n<li>\u00bd cup Milk<\/li>\n\n\n\n<li>\u00bc cup diced onion<\/li>\n\n\n\n<li>1 cup grated zucchini (about 2)<\/li>\n\n\n\n<li>1 egg, separated<\/li>\n\n\n\n<li>2 tablespoons oil (for frying)<\/li>\n<\/ul>\n\n\n\n<p> <em>Tip: I dice and freeze excess onion from recipes, making it easy to get the right amount for recipes like this.<\/em><\/p>\n\n\n\n<p> <strong>Method<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Sift flour, baking powder, and salt into a bowl.<\/li>\n\n\n\n<li>Gradually add milk, mixing until smooth.<\/li>\n\n\n\n<li>Mix in egg yolks.<\/li>\n\n\n\n<li>Stir in zucchini and onion.<\/li>\n\n\n\n<li>In another bowl, beat the egg whites until stiff and not dry.<\/li>\n\n\n\n<li>Carefully fold the egg white into the vegetable mixture.<\/li>\n\n\n\n<li>Heat oil in a moderately hot pan.<\/li>\n\n\n\n<li>Drop tablespoonfuls of mixture into pan and cook until golden brown, turning once.<\/li>\n\n\n\n<li>Drain on absorbent paper and serve hot.<\/li>\n<\/ol>\n\n\n\n<p> I like to serve vegetable fritters with <a href=\"http:\/\/shadowfoot.com\/recipe\/tomato-relish\">Tomato Relish<\/a>.<br>\n <!-- [adsense:] --><\/p>\n","protected":false},"excerpt":{"rendered":"<p>When you are growing zucchini you need to find different ways to use them in the kitchen.
