With its crispy filo pastry and creamy ricotta filling, it\u2019s both charming and practical. The recipe forgives with quantities, letting you adapt based on what\u2019s in your fridge.<\/p>\n\n\n\n<!--more-->\n\n\n\n<p><strong>Ingredients<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1 onion, finely chopped<\/li>\n\n\n\n<li>2 garlic cloves, minced<\/li>\n\n\n\n<li>1 tablespoon oil (for frying onion)<\/li>\n\n\n\n<li>Vegetables, chopped into 1-2 cm pieces. (I used \u00bd green capsicum, \u00bd red capsicum, \u00bd yellow capsicum, ~8 mushrooms, prepared basil, ~\u00bd broccoli)<\/li>\n\n\n\n<li>3 eggs<\/li>\n\n\n\n<li>500g Ricotta (approx)<\/li>\n\n\n\n<li>8 sheets filo pastry<\/li>\n\n\n\n<li>Oil spray, or 25g melted butter, for filo<\/li>\n<\/ul>\n\n\n\n<p><strong>Method<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Heat oil in a pan. Lightly cook onions and garlic. Allow to cool.<\/li>\n\n\n\n<li>Lightly cook other vegetables (either steamed, microwaved, or with onions).<\/li>\n\n\n\n<li>Mix eggs and ricotta until smooth. Add vegetables and combine.<\/li>\n\n\n\n<li>Prepare baking paper to line the pie dish.<\/li>\n\n\n\n<li>Lay a sheet of filo on baking paper. Spray with oil spray (or use melted butter). Repeat until you have 6 sheets laid out.<\/li>\n\n\n\n<li>Place baking paper and filo into the pie dish. Don&#8217;t worry about crumpling the corners; this adds to the charm of filo.<\/li>\n\n\n\n<li>Pour mixture into pie dish. Spread to the corners.<\/li>\n\n\n\n<li>Spray\/butter the remaining 2 filo sheets.
