It\u2019s a simple yet effective method that stocks me year-round with courgettes. After grating, I portion the courgettes into Ziplock bags\u2014about one courgette per bag\u2014flatten them for easy stacking, and then pop them into the freezer. This way, they\u2019re ready to go whenever I want to make this, even when courgettes are out of season. It\u2019s a great way to preserve the garden\u2019s bounty and ensure that no courgette goes to waste.<\/p>\n\n\n\n<!--more-->\n\n\n\n<p>Zucchini and courgettes are the same vegetable. They have the best flavour before they get too big. They can be quite prolific in the garden and need to be prepared in various ways to prevent becoming bored with them.<\/p>\n\n\n\n<p><strong>Ingredients<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>3-4 medium courgettes, coarsely grated<\/li>\n\n\n\n<li>4 eggs<\/li>\n\n\n\n<li>\u00bc cup flour<\/li>\n\n\n\n<li>1 small onion, finely chopped<\/li>\n\n\n\n<li>1 teaspoon baking powder<\/li>\n\n\n\n<li>1 cup of grated cheese<\/li>\n\n\n\n<li>1\/4 cup oil<\/li>\n\n\n\n<li>2 tomatoes, sliced (optional)<\/li>\n\n\n\n<li>salt and pepper<\/li>\n<\/ul>\n\n\n\n<p> <strong>Method<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Beat eggs lightly. <\/li>\n\n\n\n<li>Lightly mix in the courgettes, onion, cheese, flour, baking powder, oil, and seasoning (that is, everything else except for the tomatoes).<\/li>\n\n\n\n<li>Lightly grease a shallow baking dish.<\/li>\n\n\n\n<li>Pour half the mixture into the disk. Add a layer of tomatoes, cover with the mixture, and decorate the top with tomatoes.<\/li>\n\n\n\n<li>Bake 180 degrees for 35 to 40 minutes or until golden brown and firm to touch. <\/li>\n<\/ol>\n\n\n\n<p>Serve warm.
