The cupcakes are firm yet deliciously moist, and the lemon icing adds a creamy, tangy finish that complements the cake beautifully.<\/p>\n\n\n\n<!--more-->\n\n\n\n<p>Makes 12.<\/p>\n\n\n\n<p><strong>Ingredients<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>115g butter, softened<\/li>\n\n\n\n<li>115g caster sugar<\/li>\n\n\n\n<li>2 eggs<\/li>\n\n\n\n<li>Zest of 1 lemon<\/li>\n\n\n\n<li>1 tablespoon lemon juice<\/li>\n\n\n\n<li>1 teaspoon vanilla<\/li>\n\n\n\n<li>170g <a href=\"https:\/\/shadowfoot.com\/recipe\/substitutions\/flour-substitution\/#self-raising-flour\" data-type=\"link\" data-id=\"https:\/\/shadowfoot.com\/recipe\/substitutions\/flour-substitution\/#self-raising-flour\" target=\"_blank\" rel=\"noreferrer noopener\">self-raising flour<\/a><\/li>\n<\/ul>\n\n\n\n<p><strong>Method<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Cream butter and sugar.<\/li>\n\n\n\n<li>Add eggs one at a time and mix well.<\/li>\n\n\n\n<li>Add zest, juice, and vanilla. Mix well.<\/li>\n\n\n\n<li>Sift flour and fold into mixture.<\/li>\n\n\n\n<li>Spoon mixture into 12 cupcake cases.<\/li>\n\n\n\n<li>Bake 180\u00b0C for 18-20 minutes or until browned and cooked. Test with a toothpick or cake tester.<\/li>\n\n\n\n<li>Cool on a wire rack. When completely cold, decorate with <a href=\"#Lemon-Icing\">lemon icing<\/a>.<\/li>\n<\/ol>\n\n\n\n<h2 class=\"wp-block-heading\"><a name=\"Lemon-Icing\"><\/a>Lemon Icing (Frosting)<\/h2>\n\n\n\n<p><strong>Ingredients<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>150g butter, softened<\/li>\n\n\n\n<li>250g icing (confectioners) sugar<\/li>\n\n\n\n<li>Zest of 1 lemon<\/li>\n\n\n\n<li>\u00bd teaspoon vanilla<\/li>\n\n\n\n<li>1 teaspoon hot water<\/li>\n\n\n\n<li>1 teaspoon lemon juice<\/li>\n<\/ul>\n\n\n\n<p><strong>Method<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Cream butter and sugar.<\/li>\n\n\n\n<li>Add remaining ingredients. Beat until smooth and creamy.<\/li>\n<\/ol>\n\n\n\n<h3 class=\"wp-block-heading\">Note: These make a firm cupcake.
