Easy Self-Saucing Ginger Pudding

This Ginger Pudding with Brown Sugar Sauce is a cosy, indulgent treat perfect for chilly evenings or special occasions. The tender, ginger-spiced pudding bakes in its luscious brown sugar sauce, creating a rich, flavorful, and wonderfully moist dessert.

It is easily adaptable and can be baked in individual ramekins or as a single dish. Serve it warm with cream or ice cream for an irresistible dessert that’s sure to delight. Add fresh or crystallized ginger for an extra zing!

Serves 6-8.

Ingredients

Pudding:

  • 100g Butter, melted
  • 1 teaspoon ground Ginger
  • 100g brown Sugar
  • 2 eggs
  • 100g Flour
  • 1½ teaspoons Baking Powder

Sauce:

  • 100g Brown Sugar
  • 1 cup boiling Water

Method

  1. Mix melted butter, 100g sugar, and ginger together.
  2. Mix in eggs one at a time.
  3. Lightly mix in flour and baking powder until just combined. Do not over-mix.
  4. to make the sauce, dissolve the other half of the brown sugar (100g) with the boiling water.
  5. Gently pour the sauce into the ramekins on top of the batter.
  6. Cover loosely with foil and bake for 25 minutes in a pre-heated moderate (180°C) oven.
  7. Remove foil and continue baking for another 5 minutes.
  8. Serve hot with cream or ice cream.

Notes

  1. You can use self-raising flour and omit the baking powder
  2. Substitute one tablespoon (or more) of grated fresh ginger for the ground ginger.
  3. You can add chunks of crystallised ginger for a bonus.
  4. This recipe works well in individual 1-cup ramekins but can be made in a single dish, needing additional cooking time.
