Brandy Butter Icing

This Brandy Butter Icing is a luxurious topping, perfect for enhancing the flavour of your Christmas cake or any festive bake. With golden syrup for a hint of sweetness and brandy for a warm, indulgent touch, it spreads smoothly and creates beautiful swirls for a stunning presentation.

Ingredients

  • 450g icing sugar
  • 150g butter, softened
  • 3 tbsp golden syrup
  • 3-4 tbsp brandy

Method

  1. Gradually beat the icing sugar into the butter, adding the golden syrup and enough brandy until the icing is smooth and spreadable.
  2. Spread over the top and sides of the cake, swirling it with a palette knife.

I used this on my Christmas cake.
