This Caramel Biscuit recipe from my mother’s cookbook is quick to prepare and full of nostalgic charm. Made with golden syrup and a buttery base, these biscuits bake to a crisp, caramelised perfection.

With minimal ingredients and easy steps, they’re an ideal option for any baking occasion. Perfect with a cup of tea, these biscuits are a timeless Kiwi favourite that’s sure to please.

Ingredients

  • 4 oz Butter
  • 4 oz Sugar
  • ½ lb Flour
  • 1 teaspoon Vanilla
  • 1 tablespoon Golden Syrup
  • 1 tablespoon Milk
  • ½ teaspoon Baking Soda

Tip: I tell the scales to measure in imperial units for this.

Method

  1. Melt butter, sugar, golden syrup, milk, and baking soda in a saucepan.
  2. Stir in flour and vanilla.
  3. Roll into small balls and press with a fork.
  4. Place on a baking tray with plenty of room for these to spread.
  5. Bake for 10 minutes in a preheated moderate oven (350°F/175°C).
