Ingredients
- 4 large onions, sliced
- 1 tablespoon oil
- 2/3 cup soft brown sugar, firmly packed
- ½ cup malt vinegar
Method
- Heat oil in a large pan, add onions and gently cook for 20-30 minutes until onions are very soft and lightly browned.
- Add sugar, stirring until it is melted.
- Stir occasionally until the mixture is thick and caramelised.
- Add vinegar and simmer uncovered for 5-10 minutes to reduce.
