Chocolate Rough Biscuits

These Chocolate Rough Biscuits are a nostalgic recipe from my mother’s collection. With a rich chocolate flavour, a touch of coconut, and a delightfully rustic texture, they’re as charming as they are tasty.

The method, which includes adding boiling water to the creamed mixture, is a little unusual but works perfectly, resulting in beautiful biscuits. A simple, crowd-pleasing recipe that’s stood the test of time!

Ingredients

  • 4 oz butter
  • ½ cup sugar
  • 1 tablespoon cocoa
  • 1 teaspoon vanilla
  • ¼ cup boiling water
  • ¾ desiccated coconut
  • 1 teaspoon baking powder
  • 1 cup flour
  • Pinch of salt

Method

  1. Cream butter and sugar until light and fluffy.
  2. Beat in cocoa and vanilla.
  3. Add hot water and mix until thoroughly combined.
  4. Add coconut, flour, salt, and baking powder. Beat until combined.
  5. Place in teaspoon lots on a baking tray. (They look better if they look rough.)
  6. Bake in a moderate oven (about 175°C) for about 15-18 minutes or until cooked.

Another recipe from my mother’s recipe book. I think how boiling water is added to the creamed mixture is unusual, but these work, so I haven’t tried to change them.
