Ingredients

  • 50g butter
  • ¼ cup brown sugar
  • 1½ teaspoons ground ginger
  • 1 egg
  • 2 tablespoons golden syrup
  • 1 cup flour
  • 1 teaspoon baking soda
  • ½ cup milk
  • butter

Method

  1. Preheat gem irons in the oven at 200°C.
  2. Cream butter, sugar, and ginger in a bowl until light and fluffy.
  3. Add egg, beating well.
  4. Beat in golden syrup.
  5. Sift flour into the creamed mixture. Stir to combine.
  6. Dissolve soda in milk. Quickly stir into the creamed mixture.
  7. Place small pieces of butter into hot gem irons. Spoon in mixture.
  8. Bake at 200°C for 10 minutes or until well risen and golden brown.
