If your garden is producing lots of rocket lettuce (arugula), then here’s a recipe to use without making another salad. This recipe makes about a cup.

Ingredients

  • 125g rocket lettuce, stems trimmed, roughly chopped
  • 2 garlic cloves, finely chopped
  • 50g walnuts, roughly chopped
  • 50g parmesan cheese, grated
  • 70-80ml extra virgin olive oil
  • salt and freshly ground pepper to season

Method

  1. Blend the rocket lettuce, walnuts, parmesan cheese, and seasoning in a food processor until smooth.
  2. Gradually pour the olive oil into the running food processor until well mixed.
  3. Store in the fridge.
