Spiced Apple Cake

This Spiced Apple Cake is a warm and fragrant dessert that can be enjoyed two ways—served hot with custard as a comforting pudding or cold as a flavorful cake.

This cake, made with tender apples, sultanas, and a blend of warm spices, is simple to prepare and perfect for any time of year. A dusting of icing sugar adds the finishing touch to this versatile and delicious recipe.

Ingredients

  • 125 g butter
  • 1 cup diced apple
  • 1 cup sugar
  • 1 egg
  • 1¼ cups flour
  • 2 teaspoons mixed spice
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • ½ cup sultanas

Method

  1. Preheat oven to 160°C and grease a 20cm cake tin.
  2. Melt butter in a large bowl in the microwave.
  3. Add diced apple and microwave for another minute.
    Skip this step if you are using canned or cooked apples.
  4. Mix in sugar, then egg and sultanas.
  5. Sift dry ingredients into the apple mix and stir just enough to blend ingredients evenly.
  6. Spread the mixture into the prepared tin and bake for 45 minutes or so.
  7. Allow to cool for 5 minutes before removing from the tin.
  8. Dust with icing sugar and serve.
